Vattayappam


I had some vellayappam batter left over from yesterday's breakfast. Today I planned to use up that batter by making Vattayappam for breakfast.The recipe I followed is as follows....

Long grain rice----------------2 cups
Beaten rice flakes / poha------1/2 cup
Grated coconut ---------------1 cup
Sugar------------------------3/4 cup(adjust to taste)
Instant dry yeast-------------1/2 cup
Salt --------------------------1/8 tsp
Cashew & Rasins--------------10 each

1. Soak rice and poha overnight.
2. Grind to a paste rice and poha along with coconut and sugar.
3. Add yeast and leave to ferment for a couple of hours.
4. Add salt just before steaming
5. Ferment in a steel vessel that has been greased and floured for 30 minutes.
6. Cover the vessel with kitchen foil while steaming.
7. After 10 minutes of steam cooking open the steamer add the dry fruits close the lid and steam for a further 10 minutes or untill done.
